In the Tool Age you want to build all three structures: market, stable, and archery range. Build a stable to create a scout and an archery range to create some bowmen for defensive purposes. At the very least start building a market to coincide with your going into the Bronze Age. Once in the Bronze Age, the market lets you research the wheel, probably the most important upgrade you will make, since it speeds up your villagers' ability to collect and build by 30 percent. A key upgrade the market gives you in the Tool Age is woodcutting, which lets you collect more wood per trip. You can also build farms in the Tool Age if you build a market. However, don't build farms until all your other nearby food sources are exhausted. Build some scout ships if you're near water to protect your fishing ships and coastline. Psst! If you see some gold lying around, now is not a bad time to put a couple of villagers to the task - that gold will come in very handy in the Bronze Age.
Along with your usual resource gathering, the Bronze Age requires gold for most of the good research upgrades and units. The academy and the siege workshop are good candidates for your required buildings to go to the Iron Age, but this can vary based on the civilization you're playing. Your research options are so rich at this point that you need to make prudent decisions. How much gold do you want to spend now versus how quickly do you want to go to Iron? You simply can't research everything, so make some good choices. Do you want a strong infantry? Build the academy and hoplites, and research metalworking, scale armor, and the bronze shield. Another key research item is artisanship. Not only does it give your missile units more range, it boosts woodcutting.
