Hellhounds will appear only after you've built a Scavenger Room. Like flies, they are unstoppable explorers, only their goal is a bit more aggressive: they'll seek out the enemy and attack without hesitation.
As with flies, a well-placed Disease spell will make a Hellhound a four-legged biological bomb. Unfortunately, they have the unpleasant habit of leading enemies back to your dungeon. You can possess them to avoid this, but it's not a permanent solution. Your best bet is to throw the cur in the training room and make sure he stays there until you need him.
Hellhounds are also useful in the graveyard - they'll lift a helping leg and speed up the decomposition process, making room for more bodies and rapidly advancing the production of Vampires.
